FOOD: Dried fruit and nuts cookies/scones

Ingredients I had at home: lemon, yogurt, ripe bananas, trail mix, some dried fruit. Wasn't really sure where I was going with this but knew I needed to make use of the dried blueberries and peaches since they weren't getting eaten by themselves.The trail mix wasn't particularly tasty either.


Recipe

2 cup whole wheat
1 ts baking powder
1/4 ts salt
1 ts ground cinnamon
 - mix in bowl

2 large eggs
1/2 cup honey
1 1/2 ts lemon zest
1/3 cup greek yogurt
Less than 1/4 cup olive oil
 - mix in bowl add to previous bowl

1/2 cup dried blueberries
1/2 cup trail mix (nuts & fruit) chopped
1/2 cup dried white peach (chopped)
 - incorporate into bowl with all other ingredients

Roll into 2 separate logs, saran wrap, freeze overnight. Slice into .8 cm pieces, place on cookie sheet. Oven 375, 10 mins.




Eating them cold seems to bring out the flavors of the nuts & berries more. Or perhaps it was freezing the dough overnight.

Blueberries can get sticky and caramelize, which means they can stick to pan/your knife when you slice. Sometimes they fall out of the cookies. They do help sweeten the cookies without adding sugar though. Look for substitute.

Texture is somewhere between cookie & scone. What will adding baking soda do?
